AJOWAN

Flavor and Aroma: complex herbal note with slight bitterness which mellows when cooked or baked resulting in a nice nutty taste

Uses: spinach salad, sauteed artichokes, baked bass, roast turkey

Pairings: caraway, chili flakes, cumin, fennel,turmeric

AMCHOOR

Flavor and Aroma: citrusy fresh smell and a sour, slightly sweet taste with some herbacous notes. 

Uses: in blends in place of dried citrus peel. great meat tenderizer when used in marinades, its enzymes break down even the toughest meats with ease

Pairings: basil,dried garlic, ginger, orange peel

 

ANNATTO

Flavor and Aroma: Its scent is described as “slightly peppery with a hint of nutmeg and flavor as “slightly nutty, sweet and peppery. Known as a “poor man’s saffron to achieve a similar bright color without the high price. 

Uses: To color foods such as marinades, red rice, butters, cheeses, soups and sauces. To thicken sauces and stews. Good for rubs and marinades Achiote Paste

Pairings: cumin, garlic yellow mustard
